"Cafe Rio" Pork Salads

This is a great recipe for entertaining guests (it makes them think you are a fantastic cook)! The first time I made everything myself it took me forever, but now I am getting much quicker! I put the pork in first thing in the morning and try and do the dressing at the same time... then all that is left is the rice and shredding the lettuce.

PORK
1 lb. Boneless porkloin roast
1 can of Coke
1 c. brown sugar
1/2 c. white sugar
1 t. cumin seed
1 bottle La Victoria Mild Green Taco Sauce

Mix Coke, brown sugar, white sugar, cumin seed and taco sauce together in crock pot. Place roast in mixture and cook on low or 10 hour setting. After 6 hours, pull roast out and shred. Place back in crock pot for an additional 3 hours.

LIME RICE
1 c. Uncle Ben's Original Rice (NOT minute rice)
1/4 bunch of cilantro
Approx. 1/4 c. lime juice
Zest of a lime (keep the lime, you will need the fresh squeezed juice)
2 t. butter
2 c. water

Finely chop cilantro. Place cilantro, zest of lime, lime juice, rice, water, and butter in a bowl. Cover and microwave on High for 5 minutes. Reduce setting to 50% power; microwave for 10-15 minutes or until all the water is absorbed. Squeeze fresh lime juice onto rice and lightly fluff with fork.


CREAMY TOMATILLO DRESSING
1 packet Hidden Valley Ranch Buttermilk Dressing
1 c. buttermilk (1/2 pint)
1 c. mayo
About 1/4 bunch of finely chopped cilantro
3 tomatillos (finely chopped)
1/2 t. cayenne pepper (if you like your dressing extra spicy, use 1 t.)
2 T. lime juice

Mix all ingredients together in blender. Place in fridge for at least 2 hours.

Serve salads on Costco's cook-your-own tortillas. Top with lettuce, parmesan cheese, tortilla strips (or crushed up tortilla chips) and guacamole.
