Girly Summer Chicken Salad

Cherries are in season, so I changed up a chicken salad recipe to celebrate. Use fresh, ripe cherries (canned ones won't work for this).

This recipe serves one... maybe two. I don't make chicken salad much because my husband thinks it is girl food... like for baby showers and girl stuff. He likes it, but won't eat it. That is why the recipe is small. It is easy to scale for a larger meal.

1 cup chicken, cooked and chopped (the Costco rotisserie chicken is delicious for this)
12 cherries, pitted and cut in half
1 handful of almonds, chopped coarsely
1/4 cup smoked gouda cheese (Swiss would be good too), chopped into small chunks
1/4 cup red onion, chopped fine
1/4 cup mayonaise (add more if you like mayo)
salt
pepper
salad greens

Mix the chicken, almonds, cheese, onion, and mayo. Mix well. Add the cherries. Blend gently, just until the cherries are mixed in. Serve on a bed of salad greens, topped with salt and pepper. It would also be yummy on a croisant.

Perfect for a baby shower... or luncheon... or RS event... very girly.
